Houston is a fun town, Galveston which is about 30 minutes south of there is the closest tourist trap with lots of shops to go spend money on useless trinkets and throw bread at seagulls.
As far as activities, I'm sure there will be stuff going on all over the place around Easter... but I can't think of anything right off the top of my head.
If you're into this sort of thing, Space Center Houston is always a fun stop for the kids... they've got an IMAX theater, rocket park, space museum, and lots of fun activities. (This one's worth the trip in my opinion)
Thanks Chuck for the information. I know my sister in law has one of those books. They have only been out the for about 10 years so they find something new all the time. But they have never taken us to Galveston.

The closest event I could find around those dates in Spring, TX was the 'Texas Crawfish and Music Festival' April 20-22 and 27-29 Texas Crawfish and Music Festival Old Town Spring.
Of course this won't help you if you are coming the week before, but it looked like alot of fun
